ThunderDome 2.0., The seeming ceaseless wealth of the late 20th century is not seen again. Depression sets in with many poor people just able to eat and provide shelter for their families while small minorities of a new middle class trade gold pieces and jewelry for goods and services., The Great Depression 2.0.

Local Food and Fun Fest

This Sunday Oct. 4th, at the co-op located 542 1/2 Plumas street behind the Bead shop.
Let's make sure our Washoe Transition group all link up with the TransitionReno group.
(Most of us are there anyway...)
Workshops, winter seedling sale, local farmers, beer, books, coffee and food.

In Loving Memory




I learned this morning that one of our warriors has died.
Mr. Daniel Rosen of S. Lake Tahoe entered into the Great Beyond on February 07, 2009 at age 60.
He died in his sleep of Liver Cancer, and I pray that it was quick and pain-free.

I have a film I'd like to make with Dave Baker and his hand built solar water heating system. I would like to incorporate your solar water heating devices as well. Looking at early March for filming. Separately we'll do other devices you've invented for a stand alone film, if you are up for it.

Hey Craig, I've been baking 100% organic whole wheat bread for the past month or so, too. Any tips or good recipes? I wanted to increase my whole grain intake. I really love it. I guess it's just going to be part of my lifestyle now about every 5 days. I use honey from my apiary and organic Palestinian Olive Oil.

When we get more sun I'm going to try a loaf in our solar oven. The dough needs to get to 190° so I think it ought to work fine over a lazy day.

Here's the recipe from the King Arthur Flour website with my modified ingredients:

2 1/2 teaspoons instant yeast, or 1 packet active dry yeast dissolved in 2 tablespoons water. I use Rize organic yeast I get at Whole Paycheck, I mean Whole Foods.
1 1/3 cups (10 1/2 ounces) water
1/4 cup (1 3/4 ounces) vegetable oil I use Palestinian Olive Oil as noted above.
1/4 cup (3 ounces) honey, molasses, or maple syrup I use honey from my apiary. You can get "Al Bees" Reno honey from Whole Foods.
3 1/2 cups (14 ounces) King Arthur Traditional Whole Wheat Flour I use several brands of Organic 100% Whole Wheat Flour. King Arthur makes an organic 100% Whole Wheat White Flour I've tried a couple of times. Not worth the expense for color: I like a darker bread anyway.
1/4 cup (1 ounce) nonfat dried milk. I use Organic Valley from Whole Foods.
1 1/4 teaspoons salt I just use the slightest pinch of french sea salt. This is the only thing I can think of that I add salt to. AaMoF, I'll try it without salt next time and see how it tastes. Probably fine. Salt seems to be the most overrated spice/food ever. I never use it yet I can taste in most things, especially fresh vegetables.

Mixing: In a large bowl, combine all of the ingredients and stir till the dough starts to leave the sides of the bowl. Transfer the dough to a lightly greased surface, oil your hands, and knead it for 6 to 8 minutes, or until it begins to become smooth and supple. (You may also knead this dough in an electric mixer or food processor, or in a bread machine programmed for "dough" or "manual.") Transfer the dough to a lightly greased bowl, cover the bowl, and allow the dough to rise till puffy though not necessarily doubled in bulk, about 60 minutes, depending on the warmth of your kitchen.

Shaping: Transfer the dough to a lightly oiled work surface, and shape it into an 8-inch log. Place the log in a lightly greased 8 1/2 x 4 1/2-inch loaf pan, cover the pan loosely with lightly greased plastic wrap, and allow the bread to rise for about 1 hour, or until it's crowned about 1 inch above the edge of the pan. A finger pressed into the dough should leave a mark that rebounds slowly.

Baking: Bake the bread in a preheated 350°F oven for about 40 minutes, tenting it lightly with aluminum foil after 20 minutes. Test it for doneness by removing it from the pan and thumping it on the bottom (it should sound hollow), or measuring its interior temperature with an instant-read thermometer (it should register 190°F at the center of the loaf). Remove the bread from the oven, and cool it on a wire rack before slicing. Store the bread in a plastic bag at room temperature. Yield: 1 loaf, 16 slices.

Nutrition per serving (1 slice, 51g): 150 cal, 3.5g fat, 5g protein, 24g total carbohydrate, 5g sugar, 3g dietary fiber, 0mg cholesterol, 200mg sodium.
